Jess Apple

Jess Apple is a writer, editor, and passionate metabolic health advocate. As a founder of the Metabolic Revolution and organizer of the nation’s first rally for metabolic health, Jess is dedicated to ensuring that people have access to accurate information about human metabolism and its profound impact on physical and mental health. Her health story is here.

For 12 years, Jess served as the editor of ASweetLife, a nonprofit low-carb diabetes magazine. Jess’s work has been widely recognized and featured in publications such as the New York Times and the Financial Times. Through her writing and advocacy, she hopes to inspire medical professionals and policy makers to learn about the metabolic origins of chronic diseases.

Steve Fields

Steve Fields

Steve Fields is the founder of the nation’s largest long-term disability law firm representing individuals. He is one of the co-founders of the non-profit Metabolic Revolution, with the mission of spreading awareness about the powerful healing that metabolic therapies can provide. He is also the executive producer of Brian Sanders’ documentary series Food Lies.

After suffering from systemic lupus Steve put his autoimmune disorder into remission by adopting an animal-based diet. He is now committed to improving people’s lives through helping them embrace a new paradigm of health that addresses the root causes of chronic disease and realize the transformative power of nutrition.

Board Members

Matt Bernstein

Matt Bernstein, MD

In addition to being a respected clinical psychiatrist for more than 20 years, Dr. Matt Bernstein is Accord’s chief executive officer and an important voice in the emerging field of metabolic psychiatry. After graduating summa cum laude from Columbia University in New York, N.Y., with a bachelor’s degree in English literature, he received his medical degree from the Perelman School of Medicine at the University of Pennsylvania in Philadelphia, PA.

Dr. Bernstein then trained at the MGH McLean Psychiatry Residency Program in Belmont, Mass., where he served as chief resident. He remained at McLean Hospital after residency as a psychiatrist-in-charge and later served as assistant medical director of its schizophrenia and bipolar inpatient program. Dr. Bernstein has developed his passion for community-based care as the chief medical officer at Ellenhorn, a sister program of Accord, where he has pursued alternative ways (such as a focus on metabolism, nutrition, circadian-rhythm biology and exercise) to help individuals achieve their best levels of functioning without relying solely on traditional psychiatric approaches. In addition to serving on the clinical advisory board at Metabolic Mind, Dr. Bernstein is known for organizing the first-ever public conference on metabolic psychiatry in 2023.

Tony Hampton

Tony Hampton, MD

Dr. Hampton is a board-certified family and obesity specialist with a master’s in nutrition and functional medicine who is passionate about removing barriers to health and equipping patients and his colleagues with the education and resources they need for success. As the medical director of the Advocate Operating System, he collaborated with clinicians and staff on programs to address social determinants of health among at-risk patient populations. Programs like the Healthy Living program, educating patients about lifestyle and helping them set realistic and attainable goals, the Food Farmacy at Advocate Trinity, and South Suburban Hospitals to increase access to fresh, healthy food for patients in partnership with the Chicago Food Depository and planning to support Advocate Health’s Smart Farm growing food to support the Food Fharmacy. He also works with patients in small groups enrolled in the diabetes prevention program (D.P.P.) and COPD programs and is currently leading the Medical Group Management Committee South Region Primary Care Lead, Chair-Elect of the Advocate Health Midwest Governing Council, Medical Director for Advocates Mobile Health Team and FoodSmart. He’s authored the book Fix Your Diet, Fix Your Diabetes, is an active blogger on social media, creates educational videos on YouTube, and has a podcast ranked in the top 1% entitled Protecting Your N.E.S.T. with Dr. Tony Hampton.

Amy Laughlin

Amy Laughlin is a dedicated entrepreneur and passionate advocate for metabolic health. As the founder of Laughlin Legal, PC, a leading family law firm in Northern California, and the co-owner of Ethos Day Spa, an eco-friendly wellness destination in Western Michigan, Amy has always been committed to creating positive change in people’s lives.

Her journey into metabolic wellness began when she witnessed the transformative effects of a low-carbohydrate diet on her own family’s mental health. Inspired by the insights from Brain Energy by Dr. Christopher Palmer, Amy came to understand that mental health disorders are deeply connected to metabolic function. This realization led her to take immediate action, eliminating processed carbohydrates from her household—a change that resulted in profound improvements in her loved ones’ well-being.

Since then, Amy has immersed herself in the study of metabolic health and its powerful impact on mental and physical well-being. Her mission is to share this knowledge and support others on their own path to healing. Through education, advocacy, and personal experience, Amy is committed to empowering individuals to take control of their health through metabolic strategies.

Chérie St. Arnauld

Chérie St. Arnauld

Chérie St. Arnauld is a passionate advocate for metabolic health and the Executive Director of Metabolic Revolution, where she plays a pivotal role in advancing a new health paradigm based on the body’s metabolism.

Chérie’s journey into metabolic health advocacy began when she witnessed her sister defy a terminal cancer diagnosis through dietary intervention—a last-resort approach that extended her life by ten years. This transformative experience solidified Chérie’s belief in the power of nutrition and its profound connection to healing, shaping both her personal health journey and later, her professional path.

Having cared for her mother throughout a lifelong struggle with mental illness, Chérie’s passion for the power of ketogenic metabolic therapies deepened after learning about the connection between diet and mental health and experiencing its profound impact firsthand. Now thriving on a ketogenic diet and incorporating other metabolic therapies—such as light exposure, grounding, and movement—Chérie is deeply committed to raising awareness of metabolic health as a foundation for both mental and physical well-being. Chérie is also a dedicated advocate for transforming chronic disease treatment and prevention, developing pathways to drive legislative change.
